2 frozen pie crusts, thawedCut in half.
Filling: 1 hard egg, chopped fine
1 c. cooked meat( can be shredded beef or pork or chicken )
1 thinly sliced onion
2 green olives, sliced thin
2 T. raisins, chopped
2 T. chopped tomato
Mix well. Divide among pie shells.
Fold over and pinch edges to seal using fork.
Place on cookie sheet.
Bake in 400' oven until delicately browned.
Can use tuna or salmon or ground meat.
Can season with chili powder, salt + pepper.
Can add shredded cheese.
Can also cut crusts into 4 pieces and make smaller empanadas.
Can also use tube crescents as crust.
Open and unroll as 2 rectangles, or 4.
Pinch seams to create solid shell.
Fill same as above.
